Porter’s Pumpkin Popcorn Snack Mix

1. Gather your Ingredients:
3 quarts Popped Popcorn (about 1 ½ cups unpopped kernels)
4 cups Cheerios
4 cups Corn or Rice Chex Cereal
2 cups Salted Peanuts
1 cup Packed Brown Sugar
¾ cup Light Corn Syrup
¼ cup Butter, cubed
2 teaspoons Vanilla Extract
½ teaspoon Baking Soda
1 (16 oz.) package Candy Pumpkins or Candy Corn
2. Preheat your oven to 250𝆩F. In large greased roasting pan, combine the popcorn, cereal and peanuts. (That includes the Cheerios and the Chex!)
3. In a large saucepan, combine the brown sugar, corn syrup and butter; bring to a boil. Boil for 6 minutes, stirring occasionally. Remove from the heat; quickly stir in vanilla extract and baking soda until mixture is light and foamy. Immediately pour over the popcorn mixture; toss to coat.
4. Bake, uncovered for 1 hour, stirring every 15 minutes. Remove from oven and quickly stir in candy. Cool completely.
You can substitute maple syrup for the corn syrup if you need to. The flavor difference is so subtle you probably won’t notice.
I like mine with a little more coating so I double the brown sugar, the light corn syrup, the butter, the vanilla extract, and the baking soda.
You can use any candy that won’t melt with a little bit of heat (Mike and Ike’s, Gummies, Jelly Beans, Skittles, etc.)
