Halloween Snack Mix Recipie

Porter’s Pumpkin Popcorn Snack Mix

1. Gather your Ingredients:

  • 3 quarts Popped Popcorn (about 1 ½ cups unpopped kernels)

  • 4 cups Cheerios

  • 4 cups Corn or Rice Chex Cereal

  • 2 cups Salted Peanuts

  • 1 cup Packed Brown Sugar

  • ¾ cup Light Corn Syrup

  • ¼ cup Butter, cubed

  • 2 teaspoons Vanilla Extract

  • ½ teaspoon Baking Soda

  • 1 (16 oz.) package Candy Pumpkins or Candy Corn

2. Preheat your oven to 250𝆩F. In large greased roasting pan, combine the popcorn, cereal and peanuts. (That includes the Cheerios and the Chex!)

3. In a large saucepan, combine the brown sugar, corn syrup and butter; bring to a boil. Boil for 6 minutes, stirring occasionally. Remove from the heat; quickly stir in vanilla extract and baking soda until mixture is light and foamy. Immediately pour over the popcorn mixture; toss to coat.

4. Bake, uncovered for 1 hour, stirring every 15 minutes. Remove from oven and quickly stir in candy. Cool completely.

  • You can substitute maple syrup for the corn syrup if you need to. The flavor difference is so subtle you probably won’t notice.

  • I like mine with a little more coating so I double the brown sugar, the light corn syrup, the butter, the vanilla extract, and the baking soda.

  • You can use any candy that won’t melt with a little bit of heat (Mike and Ike’s, Gummies, Jelly Beans, Skittles, etc.)
